Ground Beef & Veggie Stir Fry

With our crazy work schedules, it can be difficult to find meals that are simple to prepare that we both actuallt LOVE. Tonight we were lucky enough to sit down to eat together so I made something my husband has been requested: Ground Beef & Veggie Stir Fry - So simple!

INGREDIENTS:

2lbs. lean ground beef

2 green peppers (sliced)

2 red peppers (sliced)

1 onion (sliced)

1 package mushrooms

1 can Ro-Tel diced tomatoes & jalapeños (drained)

Extra Virgin Olive Oil

21 Day Fix Southwest seasoning

Crushed red pepper flakes (optional)

DIRECTIONS:

1. Brown ground beef. Drain grease. Add Ro-Tel and Southwest seasoning. Stir and let cook for a few more minutes.

2. Slice peppers, onions, and mushrooms. Add EVOO to frying pan. Heat and add veggies. Sautee until tender. Add red pepper flakes to taste.

3. Serve & Enjoy!

Simple & Delicious! My husband prefers his with brown rice but I saved my carbs to use on whole-wheat tortillas. I constructed mini-burritos with the meat and veggies, topped with a little shredded cheese. YUM!
