Sweet Potato Fries with Creamy Curry Sauce

If you like sweet potato fries, you HAVE to try these! And even if you don't, you should give them a shot. They're SO DELICIOUS! They're a good alternative for deep fried french fries and they are seasoned with salt, pepper, paprika, chili powder, cinnamon, garlic and coconut oil to deliver a punch of flavor.
Sweet potatoes are a great source of beta-carotene, an antioxidant that converts to vitamin A in the body. Also, if your potatoes are organic, you can leave the skin on for an extra source of fiber but if they aren't, you should peel them.

Prep time: 15 minutes
Cook time: 20-30 minutes
Makes: 4 servings
INGREDIENTS:
2 large sweet potatoes, cut into sticks
1/2 Tbsp salt
1 tsp pepper
1/4 tsp paprika
1/2 tsp chili powder
1/4 tsp cinnamon
2 garlic cloves, minced
1/2 cup coconut oil, melted (can substitue EVOO)
1 cup organic Greek yogurt
2 tsp lime juice
1/2 Tbsp curry powder
DIRECTIONS:
1. Preheat oven to 425F.
2. Toss sweet potatoes, salt, pepper, paprika, chili powder, cinnamon, garlic and coconut oil in a large bowl.
3. Spread coated sweet potatoes on a baking sheet and bake for 20-30 minutes or until potatoes are tender, stirring every 5 minutes.
4. While the sweet potato fries are baking, combine Greek yogurt, lime juice and curry powder in a bowl and stir until mixed.
