Bob Marley's Jerk Marinated Chicken

INGREDIENTS 1 onion, finely chopped 1/2 cup scallion, finely chopped 2 tsp fresh thyme leaves 1 tsp salt 2 tsp sugar 1 tsp ground Jamaican pimento (allspice) 1/2 tsp ground nutmeg 1/2 tsp ground cinnamon 1 hot pepper, finely ground 1 tsp ground black pepper 3 TBSP soy sauce (Substitute Braggs Liquid Aminos to make 21 Day Fix approved) 1 TBSP EVOO 1 TBSP apple cider or white vinegar 2 lbs chicken breast, (diced 1/2-inch thick if making kabobs) 12 wooden skewers, soaked in water for 2 hours (for kabobs)

DIRECTIONS

1. Mix together onion, scallion, thyme, salt, sugar, allspice, nutmeg, cinnamon, hot pepper, black pepper, soy sauce (Bragg's liquid aminos) oil and vinegar in a food processor.

2. Place the chicken and/or skewers in a shallow baking dish and cover with the marinade. Marinate in the refrigerator overnight.

3. Place the skewers onto a hot grill and grill until done, about 2 to 3 minutes per side.
