Fixate - Creamy Chicken Salad

So, I'm not really a huge salad person, and I really DO NOT do dressing - but since I tried this salad from Autumn Calabrese's new FIXATE cookbook, I have been HOOKED! It quickly took a spot on my "Favorite Salads" list (which, let's be honest, really only consists of Panera's Strawberry Poppyseed Chicken Salad...).

INGREDIENTS
3 cups chopped rotisserie chicken breast, boneless and skinless (I prefer to just use plain grilled chicken)
1/2 cup chopped green apple
1/2 cup seedless red grapes, cut in half
1/3 sliced raw almonds
2 green onions, sliced
2 Tbsp chopped fresh tarragon (I omit this...)
1/4 cup Fixate Honey Mustard Salad Dressing (recipe)
8 cups shredded romaine lettuce (I use baby spinach instead)
DIRECTIONS
1. Combine chicken, apple, grapes, almonds, green onions, tarragon, and Honey Mustard salad dressing in a large bowl; mix well. Refrigerate, covered, for 2 hours (if all of my ingredients were previously refrigerated and I need a meal NOW! I omit this...)
2. Serve 1 1/4 cups Creamy Chicken Salad of 2 cups romaine lettuce for each serving.
TIP:
The Creamy Chicken Salad could also be served in an 8" sprouted whole-grain tortilla as a wrap.
SERVES: 4 (1 1/4 cups each)
PREP TIME: 15 minutes
COOK TIME: None (unless you cook the chicken yourself)
